Sometimes it's the hidden gems that surprise you the most and this definitely fit Bluebird Espresso to a tee. One of my new favourites with all the brunch standards served to perfection. Nothing could've prepared me for the magic here.
Bluebird Espresso is a 'blink and you'll miss it' cafe along Johnston Street in Collingwood so definitely look out for it. It is quite small in size though there is additional seating out the back but very little seating on the street (max 5 seats). It is bright and cozy offering a view of some of the cooking done at the counter. The crowd seemed to be made up of a mix of hipsters and locals which left a pretty good first impression...go where the locals go.
First up we had the Pork Benny (Smoked pulled pork on a jalapeno cheddar cornbread waffle, two poached eggs & hollandaise). This was an excellent twist on the usual Pork Benny as the cornbread was so flavoursome, contributing as much to the dish as the egg and hollandaise sauce. Surprisingly this dish was not too heavy and was light enough for us to be ready to go for dessert.
Next up we had the S'mores Brioche French Toast (cornflake crusted, Mork chocolate sauce, Nutella, marshmallows and strawberries) which was the highlight of the meal. The crunchy cornflake crust and soft marshmallow centred really contrasted well with the textures working well together. The only complaint would be overall the dish was quite sweet though the strawberries did provide pops of freshness.
I would highly recommend a visit to this unsuspecting cafe as it delivers the goods on taste and presentation all in one (which I find can be quite rare)!
